Are you looking for a quick and healthy lunch or dinner idea? Look no further. This baked salmon with quinoa salad is ready within 20 minutes.

Now that we are in lockdown, a lot of my friends pull out recipes which they don’t make in “normal” times because they are time-consuming to make but now they have enough time to play with food in the kitchen.
However, a lot of us work from home online. I’m one of these people. I often finish work at 6.30 in the evening and I don’t really have time to putter around the kitchen. Thus, I often open my old recipe notebook that contains healthy ad quick-to-make recipes.

Ingredients
– one salmon fillet per person
– 1 cup of quinoa
– 2 cups of water
– 2 cups of frozen vegetable mix
– lemon slices (one slice per salmon fillet)
– 1/2 Tbsp. fresh parsley, finely chopped
– 2 Tbsp. olive oil
– 1 Tbsp. lemon juice
– salt and pepper to taste (I use a four-colour pepper mix)

Pre-heat the oven to 200 degrees Celsius.

Steam the vegetables for about 15 minutes. They have to cook through but shouldn’t go mushy.
(If you use fresh vegetables, cooking time is shorter, about 5-10 depending on the type of vegetables you use.)

Mix the quinoa and the water in a pot and cook the quinoa on medium heat, uncovered until the cooking water evaporates (about 10- 15 minutes). Season it with salt and pepper while you cook and add the parsley in the last 5 minutes of cooking. Remove the pot from the heat, put the lid on and let the quinoa soften for 5 more minutes in its steam. After 5 minutes, mix in the steam vegetables and you side dish is done.

Now onto the star of the show…

Prepare a heatproof dish for the salmon. I use a salmon ceramic one I bought at IKEA. In a small bowl or ramekin, mix the olive oil, lemon juice and add some salt and pepper to taste. Put the fillets in the heatproof dish, and brush the oil and lemon juice mixture on. Then place on a lemon slice on each fillet, put the dish in the oven and bake them for about 15-20 minutes depending how soft or crispy you like your fish.

Lunch or dinner is ready! Now it’s time to serve and enjoy.
