Chocolate-coffee cake

low-carb chocolate cakeThis year, I wanted to get the Easter baking quickly, but I also wanted to present something really delicious on the festive table. The following chocolate cake is made special by the coffee in it. As it’s sugar-free, weight-watchers can also eat it. And for serving, I’ll give you five ideas.I wanted to bake something that is quick to make but special. Having frosting in it wasn’t important. Instead, I wanted to focus on making the sponge special. Then it came to me how much I hate washing up the cake tins after baking, so I purchased some disposable cake forms at Interspar. If I remember well, there are 5 pieces in a box and they come in different colours and sizes. The ones I got are 25 cm in diameter. The perforation on it makes it easier to tear off once your masterpiece is ready.

But what do you need for the cake?

– 100 g xylitol
– 100 ml water
– 2 Tbsp. coffee powder
– 75 g dark chocolate, chopped
– 2 egg yolks
– 5 egg whites
– 50 g cocoa powder
– 50 g flour
– 1/2 tsp. baking powder

As far as chocolate is concerned, the higher the cocoa content is, the better. I use chocolate with at least 70% cocoa content. I buy this brand at Lidl:

Pre-heat the oven to 180 degrees Celsius.

Pour the water with the xylitol and coffee powder into a deep pan. Practically, we’re making coffee syrup. Cook it on medium heat until it starts to simmer. Remove from the heat and add the chocolate. Set aside to cool.

While the chocolate-coffee mixture is cooling, beat the egg whites until they become stiff. Put the yolks into a different bowl and give them a light whisk. Add the chocolate to the yolks, constantly stirring.

In go the dry ingredients: the flour, the cocoa powder and the baking powder. Stir them to get a lump-free mixture and fold the egg whites in. Pour the batter into your cake tin.

low-carb chocolate cakeAs the batter is quite heavy, I put my paper cake form onto a shallow cake tin. It has a wonderful dark brown colour and it shines beautifully! It’s ready to go into the oven where it bakes for about 30 minutes.

Once it’s done, let it cool completely and remove it from the tin.

low-carb chocolate cakeBefore serving, you can dust it with cocoa powder just as I did. But you can also put a dollop of whipped cream on each piece of cake or you can top it with some fruit.
