Dairy-free pea soup

dairy free pea soupIn this post, you can read the recipe of a refreshing, summery pea soup.Though I’m not a huge fan of soup, it feels nice to have a bowl of cold soup in the summertime. I really like tomato soup with loads of basil (not with sugar, in the Hungarian way) or the pea cream soup you’ll read about in this post. In the summertime, I don’t really like soups with cream, so I omitted it from this version. Of course, you can substitute it with some lactose-free alternative right before serving.

Ingredients:

  • 450 g peas
  • 1 small onion, finely chopped
  • 750 ml vegetable stock
  • 1 handful of fresh parsley, finely chopped
  • 2 Tbsp. olive oil
  • salt and pepper according to taste

In a pot, sautée the onion in the oil until translucent. Pour the peas into the pot, add the vegetable stock and salt and pepper, if necessary.

With the lid on, cook it for about 20 minutes or until the peas become kind of tender.

Purée it with a blender or stick blender and sprinkle the parsley on top before serving. Serve it cold – I don’t think it’s that delicious when it’s hot.

If you want a more special flavour, you can use fresh mint leaves instead of parsley.
