Not only it is delicious, but you can also minimise the number of dirty dishes while you’re making it. My version was made without meat and I also swapped rice for bulgur wheat.The good thing about this dish is that it’s quick and easy to make, so I recommend it for beginners. You can eat it hot or cold as some kind of a salad.

– 100 g bulgur wheat
– 200 ml water
– 250 g mushrooms
– 3 big tomatoes
– 1 Tbsp. fresh parsley, coarsely chopped
– half a Tbsp. fresh oregano
– juice of half a lemon
– 2 Tbsp. olive oil
-salt and pepper to taste

Cook the bulgur wheat in lightly salted water for 15-20 minutes.

Cut the mushrooms into quarters, season them with salt, pepper and the herbs and sautée them in the olive oil for about 10 minutes. Add the chopped tomatoes and cook for another 10 minutes.

Mix the sautéed vegetables with the bulgur wheat and drizzle it with the lemon juice. Your healthy and delicious lunch is ready in less than half an hour.
