Pork chops with gnocchi and white wine gravy

pork chops with gnocchiI made these quick and easy pork chops fancier with some white wine gravy. Instead of the usual potato or rice, I cooked gnocchi as a side dish. It’s quick to make, yet it’s festive.

– 4 pork chops
– 2 Tbsp. butter
– 2 tsp. dried sage
– 2 tsp. mustard
– 50 ml dry white wine
– 100 ml chicken stock
– salt and four-colour pepper to taste
– 250 g gnocchi

Cook the gnocchi according to the instructions on the package.

Season the chops with salt and pepper and fry them on both sides using a little bit of olive oil. Once they are ready, I don’t set the aside on a plate, but I wrap them in tinfoil to keep them warm and juicy.

Cook the gravy in the pan that you used for frying the meat. You don’t have to wash it. Pour the wine and chicken stock in, add the mustard and sage and give it a good stir. In goes the butter and another good stir. Cook it on medium heat for about 10 minutes until the gravy thickens and some of the alcohol evaporates.

When you serve it, pour some gravy on the meat and the gnocchi as well.
