Rosemary cookies

I seasoned these cookies with one of my favourite herbs: rosemary. If you are interested in the recipe, keep on reading.

I bought a cookie stamp set at Pepco the other day. As soon as it landed in my basket, I knew how I will try them out.


  • 250 g durum wheat flour
  • 125 g cold butter, cut into cubes
  • 125 g grated cheese
  • 1 egg yolk + 1 whole egg for the egg wash
  • 1.5 tsp. dried rosemary
  • 1/2 tsp. salt.

When I make this kind of dough, I make sure that all the ingredients are cold, otherwise, the dough will fall apart. In order to avoid warming it up, I make it in a food processor.

I put the flour, butter, cheese, egg yolk, rosemary and salt in the food processor and combined them.

I wrapped the dough in cling film and put it in the fridge for half an hour.

re-heated the oven to 160 degrees Celsius and lined a baking tray with parchment paper.

On a silicone sheet dusted with flour, I rolled out the dough to 0.5 cm in thickness and cut different shapes with cookie cutters and also decorated with some of them with the cookie stamp. I transferred them onto the baking tray and brushed all of them with the lightly beaten whole egg.

I baked them for about 15 minutes.
