Vegan peanut butter energy balls

These delicious and healthy energy balls were made from 4 ingredients and in 3 versions. They are the perfect snack on busy weekdays.

One recipe makes 6 balls.

Version 1: Peanut butter balls with chocolate


Who doesn’t like chocolate? As far as I’m concerned, my favourite chocolate is the one with peanuts in it.

For this version, thoroughly combine 125 unsweetened peanut butter, 80 g of agave nectar and 70 g of oat flakes. With damp hands, make balls from the mixture and place them on a baking tray or plate lined with parchment paper. Melt 25 g of good quality, high cacao content dark chocolate in the microwave and drizzle the balls. Put them in the fridge and let them set.

Version 2: Peanut butter balls with dried fruit
 
My favourite dried fruit of all are cranberries. I like its tart tangy flavour. Anytime I buy them, I always make sure that the unsweetened, sugar-free type lands in my shopping cart.
The preparation is similar to the previous one: combine 125 unsweetened peanut butter, 80 g of agave nectar and 70 g of oat flakes. To this, add half a tablespoon of dried fruit. It’s advisable to cut bigger fruit – like prunes, apricots or pears – into small pieces, while the small ones, such as raisins, cherries or cranberries – can remain in one piece. Again, make small balls from the mixture and leave them in the fridge to set.
 
Version 3: Peanut butter balls with cinnamon
I love cinnamon! In this case, I sprinkled the balls made from the mixture of 125 unsweetened peanut butter, 80 g of agave nectar and 70 g of oat flakes with ground cinnamon.
If you don’t like cinnamon, Dutch cacao powder is a delicious alternative. You can dust the balls with it or even roll them in it.
