I love the classic Greek tzatziki with a lot of cucumbers in it, especially in the summer. Sometimes I eat it with meat dishes instead of a side dish. But for me, the gastronomical symbol of spring is radish. Its bright pink colour cheers you up and in addition, it’s very delicious. Today I made tzatziki from radish.Ingredients:
– 10 radishes
– 2 spring onions, white parts only
– 250 g Greek yoghurt
– 1 Tbsp. fresh dill, finely chopped
– juice of half a lemon
– salt and pepper to taste
Cut the radishes into matchsticks and put them into a bowl that has a lid. Add the sliced spring onions, the grated garlic clove, the dill and the lemon juice. Season with salt and pepper, pour the yoghurt on and give it a good stir. Put the lid on.
It’s advisable to leave it in the fridge for an hour. It doesn’t only make it taste better, but the skins of the radishes give it a nice pink hue.
It’s perfect with potato or meat dishes.
