I haven’t posted a recipe for ages, but in October, I will have some that I want to share with you. In this post, you will read the recipes for two dishes – both of them were inspired by a picky toddler.

These two recipes have stories. One day, my daughter wasn’t willing to eat the mixed vegetables that I served as a side dish. Although she told me to give it to the dog, I didn’t really want to. However, I thought about the fact that she does like meatball kind of dishes. Vegetable patties maybe? Why not?


  • 250 g steamed vegetable mix (peas, corn, red bell pepper, green beans)
  • 1 egg
  • 50 g grated cheese
  • 4 Tbsp. flour
  • 3 Tbsp. whole-wheat breadcrumbs
  • 1 clove of garlic, minced
  • 1 tsp. dried basil
  • 1/2 tsp. dried oregano
  • salt and pepper to taste
  • oil or frying

I let the vegetables cool to room temperature. I put them in a food processor. Once they were cool, I put them in a food processor and pulsed them until they broke a bit. I didn’t want to purée them, so I made sure to have vegetable pieces in the mixture. I transferred it into a bowl, I mixed in the egg, breadcrumbs and 4 tablespoons of flour (you might need more or less – the point is to have a mixture that is easy to shape) with my hands. Then I added the garlic, herbs and seasoned it with salt and pepper. Finally, I mixed in the grated cheese, too. I covered the bowl with a piece of cling wrap and put it in the fridge for half an hour.

I heated oil in a pan and formed patties from the mixture with damp hands. I fried them in hot oil until they were golden brown.

It was a huge success.


The other recipe is a vegetable muffin. Yes, it’s a savoury muffin. Unfortunately, I couldn’t take any photos of the muffins because they were gone too quickly.

These muffins, too, were made on a day when Janka refused to eat the steamed vegetables. When I was decluttering the pantry, I found two boxes of muffin liners and the leftover vegetables and the liners gave me an idea: I’ll bake vegetable muffins.


  • 170 g graham flour
  • 75 g steamed vegetable mix
  • 250 ml milk
  • 50 g grated cheese
  • 1 egg
  • 60 ml vegetable oil
  • 7 g baking powder
  • 1 tsp. salt
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • a pinch of four-colour pepper blend

I pre-heated the oven to 170 degrees Celsius and lined the cups of a muffin tin with the muffin liners.

In a bowl, I combined the flour, baking powder, herbs, salt and pepper. In another bowl, I mixed the egg, milk and oil. I poured this mixture into the dry ingredients and gave it a good mix. Then I added the grated cheese and the vegetables, too.

I poured the batter into the muffin liners and put the tin in the oven for about 30-35 minutes until the muffins were baked.

Of course, this way Janka was willing to eat the vegetables…
